Favorite Recipe #1 - Joanne Lee Molinaro's Kimchi Chigae
This evening’s dinner was the Kimchi Chigae recipe from Joanne Molinaro’s cookbook The Korean Vegan. We’ve made a number of things from this book but the kimchi chigae/jigae gets made pretty frequently around here.
The recipe has been reprinted in full at the Kitchn. You can find it here: Joanne Lee Molinaro’s Kimchi Chigae
The character of the kimchi makes a big difference here but this is both quick and hard to screw up. It’s also adaptable, as is the doenjang chigae from the same cookbook; they can take an added veggie or two, or sub the tofu for something like soy curls.
I like it so much, I thought it would make a fitting entry for inaugurating a series of favorite recipes. We’re not always good at repeating recipes – we tend to cook widely and are always looking for new things – so when something gets repeated a lot, I like to mark it as a favorite. I’ll start doing that here going forward.
I can recommend the whole cookbook, whether you are vegetarian or not, and Molinaro has more recipes at her website of the same name.
